Ingredients

  • 1.5 cups orzo
  • 2 cups tomatoes (diced into 1/2-inch pieces)
  • 2 cups cucumbers (diced into 1/2-inch pieces)
  • 0.5 cup red onion (finely diced into 1/4-inch pieces)
  • 0.5 cup olives
  • 0.5 cup feta
  • 1.5 tbsp dill
  • 4 tbsp olive oil
  • 3 tbsp lemon juice
  • 1 tsp oregano
  • 0.25 tsp garlic powder
  • 0.5 tsp salt
  • 0.5 tsp pepper

Instructions 

  • Cook the orzo according to package instructions, then drain and let cool.
  • In a large bowl, combine cooled orzo, tomatoes, cucumbers, red onion, olives, and feta.
  • In a small bowl, whisk together olive oil, lemon juice, dill, oregano, garlic powder, salt, and pepper.
  • Pour dressing over the salad and toss to combine.
  • Serve immediately or refrigerate for up to 2 hours before serving.

Notes

For extra flavor, add fresh herbs or a splash of balsamic vinegar.
