Ingredients

Balsamic Vinegar

  • 2 cups balsamic vinegar

Tomatoes

  • 3 ripe tomatoes ripe tomatoes, sliced thick (or 1 pint cherry tomatoes sliced in half)
  • 12 oz fresh mozzarella cheese (sliced thick or mini mozzarella balls)

Fresh Basil Leaves

  • to taste Fresh basil leaves

Olive Oil

  • for drizzling Olive oil

Kosher Salt and Black Pepper

  • to taste Kosher salt and freshly ground black pepper

Instructions 

  • Simmer balsamic vinegar until reduced to a glaze, about 10-20 minutes, then cool.
  • Arrange tomato and mozzarella slices on a platter, alternating and adding basil leaves.
  • Drizzle with olive oil and balsamic glaze, then season with salt and pepper.
  • Serve immediately as a fresh appetizer or side.

Notes

Use mini mozzarella balls for easier assembly.
