A quick and delicious fried rice recipe perfect for a fast meal using simple ingredients.
Ingredients
Rice and Vegetables

cups
cooked rice (preferably day-old)
(Break up clumps if using leftover rice)
2
large
eggs
1
cup
mixed vegetables (peas, carrots, corn)
2
tablespoons
soy sauce
2
tablespoons
vegetable oil
1
tablespoon
green onions, chopped
to taste
Salt and pepper
Instructions
Ensure rice is ready and break up clumps if using leftover rice.
Heat 1 tablespoon of oil, scramble eggs until cooked, then set aside.
Add remaining oil, sauté vegetables for 2-3 minutes, then stir in rice and cook for another 2-3 minutes.
Return eggs to skillet, add soy sauce, season with salt and pepper, and mix well. Serve garnished with green onions.
Notes
Use day-old rice for best results and quick cooking.
