A quick and delicious fried rice recipe perfect for a fast meal using simple ingredients.

Ingredients

Rice and Vegetables

  • 2 cups cooked rice (preferably day-old) (Break up clumps if using leftover rice)
  • 2 large eggs
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 1 tablespoon green onions, chopped
  • to taste Salt and pepper

Instructions 

  • Ensure rice is ready and break up clumps if using leftover rice.
  • Heat 1 tablespoon of oil, scramble eggs until cooked, then set aside.
  • Add remaining oil, sauté vegetables for 2-3 minutes, then stir in rice and cook for another 2-3 minutes.
  • Return eggs to skillet, add soy sauce, season with salt and pepper, and mix well. Serve garnished with green onions.

Notes

Use day-old rice for best results and quick cooking.
