Instructions
Whisk together vinegar, sugar, sesame oil, sesame seeds, salt, and ginger to make the dressing.
Shred the carrots and thinly slice the cabbages using a mandoline.
Combine all vegetables, edamame, cilantro, scallions, and red bell pepper in a large bowl.
Pour the dressing over the vegetables and toss to combine.
Sprinkle peanuts and sesame seeds on top before serving.
Notes
For extra crunch, add toasted sesame seeds just before serving.
