A vibrant and crunchy coleslaw tossed in a flavorful sesame dressing, perfect for a quick and healthy side.

Ingredients

Dressing

  • 0.67 cup cider vinegar (preferably Bragg for tanginess)
  • 3.5 tbsp sugar
  • 2 tbsp sesame oil (La Tourangelle for toasted aroma)
  • 2.5 tbsp sesame seeds
  • 0.5 tsp salt
  • 0.25 tsp ground ginger
  • to taste black pepper black pepper
  • 1 piece carrot (shredded into matchsticks)
  • 1.5 bunches cilantro
  • 2 scallions scallions
  • 0.5 head red cabbage (thinly sliced)
  • 0.5 head green cabbage
  • 0.5 cup shelled edamame
  • 0.33 red bell pepper red bell pepper (diced)
  • 0.25 cup peanuts

Instructions 

  • Whisk together vinegar, sugar, sesame oil, sesame seeds, salt, and ginger to make the dressing.
  • Shred the carrots and thinly slice the cabbages using a mandoline.
  • Combine all vegetables, edamame, cilantro, scallions, and red bell pepper in a large bowl.
  • Pour the dressing over the vegetables and toss to combine.
  • Sprinkle peanuts and sesame seeds on top before serving.

Notes

For extra crunch, add toasted sesame seeds just before serving.
