Ingredients

Grains

  • 1 cup quinoa, rinsed
  • 2 cups water

Legumes

  • 1 can (15 oz) chickpeas, drained and rinsed

Produce

  • 1 ripe avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped

Oils & Vinegars

  • 2 tbsp olive oil
  • 1 tbsp lemon juice

Seasonings

Instructions 

  • Cook quinoa in water until tender, then let it cool.
  • Combine cooled quinoa, chickpeas, avocado, red onion, and cilantro in a large bowl.
  • Drizzle with olive oil and lemon juice, then toss gently.
  • Season with salt and pepper, then serve chilled.

Notes

For extra flavor, add a pinch of cumin or chili flakes.
