Instructions
Preheat oven to 375°F (190°C).
Make flax eggs by mixing flaxseed meal and water; let sit until gelled.
Beat butter, sugar, nut/seed butter, and vanilla until blended; add pumpkin and flax eggs, mix well.
On low, mix in flour, baking soda, baking powder, pumpkin spice, coffee, and salt.
Form batter into 1 tbsp balls, flatten slightly, and bake for 10 minutes. Cool before filling.
Notes
Ensure to cool the cookies completely before filling for best results.
