These spiced pumpkin cookies are perfect for fall, combining warm flavors with a chewy texture.

Ingredients

Dry Ingredients

  • 2.5 cups all-purpose flour (scooped and leveled)
  • 1 teaspoon coarse sea salt
  • 2 teaspoons baking soda
  • 3 teaspoons pumpkin pie spice

Wet Ingredients

  • 1/4 cup coconut oil (softened not melted)
  • 1/2 cup butter (cold and cut into pats)
  • 1 cup light brown sugar (scooped and leveled)
  • ½ cup pumpkin puree
  • 1/2 cup molasses
  • 1 large egg

Additional

  • 12 cookies turbinado sugar

Instructions 

  • Preheat oven to 350ºF and spray baking sheet.
  • Mix dry ingredients in a bowl and set aside.
  • Cream coconut oil, butter, and sugar until smooth.
  • Add pumpkin, molasses, and egg; mix until combined.
  • Gradually add dry ingredients, then refrigerate dough for 30 minutes.
  • Form dough into balls, roll in sugar, place on sheet, and bake for 12 minutes.
