Instructions
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
Whisk dry ingredients together. In a mixer, blend sugars and oil, then add egg, vanilla, and pumpkin.
Gradually add dry mixture to wet, then fold in chocolate chips.
Drop 2 Tbsp dough onto baking sheets, spacing two inches apart.
Bake for 11-13 minutes until cookies are set. Cool before serving.
