Ingredients

Dry ingredients

  • 2 cups all-purpose flour (spoon and level to measure flour)
  • 2 tsp baking powder
  • 3/4 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/8 tsp ground cloves
  • 1/2 tsp salt

Sugars

  • 1/2 cup granulated sugar
  • 1/2 cup light-brown sugar (packed)

Wet ingredients

  • 1/2 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup canned pumpkin puree
  • 1 1/2 cups semi-sweet chocolate chips

Instructions 

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Whisk dry ingredients together. In a mixer, blend sugars and oil, then add egg, vanilla, and pumpkin.
  • Gradually add dry mixture to wet, then fold in chocolate chips.
  • Drop 2 Tbsp dough onto baking sheets, spacing two inches apart.
  • Bake for 11-13 minutes until cookies are set. Cool before serving.

Notes

Chill the dough for better shaping if needed.
