Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Mix sugar and oil in a bowl. Add egg, milk, pumpkin, and vanilla; stir until smooth.
Combine dry ingredients in a separate bowl, then add to wet mixture along with chocolate chips. Stir until just combined.
Drop large spoonfuls onto prepared baking sheet.
Bake for 10-12 minutes until tops are no longer glossy.
Notes
Chill dough before baking for thicker cookies, if desired.
