Delicious and healthy no-bake treats combining pumpkin, protein, and crispy rice for a perfect snack or dessert.
Ingredients

canned pumpkin puree (not pumpkin pie filling)

Oat & Seed Butter from Garnish (or nut butter of your choice)

zero-carb “syrupy” sweetener

ground flax seed (optional)

protein powder (vanilla, cake batter or pumpkin flavor)

plain puffed rice cereal (like Rice Krispies)

Instructions
Line a 8"x8" or 9"x6" pan with parchment or spray with cooking spray.
Mix pumpkin, oat butter, and syrup; warm seed butter if needed. Stir in flax seed meal if using.
Add protein powder and mix until thick and pasty. Fold in rice cereal until coated.
Press mixture into prepared pan; freeze for 10 minutes to set.
Optional: melt chocolate chips and coconut oil; drizzle over treats. Freeze for 5 minutes before cutting into 8 bars.
Serve immediately or store in an airtight container in the fridge for up to 5 days.
Notes
For a firmer texture, freeze longer. Adjust sweetness by varying syrup amount.
