Protein Pumpkin Krispie Treats

Delicious and healthy no-bake treats combining pumpkin, protein, and crispy rice for a perfect snack or dessert.

Ingredients

Base

  • 1 cup canned pumpkin puree (not pumpkin pie filling)
  • 0.5 cup Oat & Seed Butter from Garnish (or nut butter of your choice)
  • 0.33 cup zero-carb “syrupy” sweetener
  • 1 tbsp ground flax seed (optional)
  • 0.67 cup protein powder (vanilla, cake batter or pumpkin flavor)
  • 2.5 cup plain puffed rice cereal (like Rice Krispies)
  • 3 Tbsp sugar-free chocolate chips
  • 0.5 tsp coconut oil

Instructions 

  • Line a 8"x8" or 9"x6" pan with parchment or spray with cooking spray.
  • Mix pumpkin, oat butter, and syrup; warm seed butter if needed. Stir in flax seed and protein powder until thick.
  • Fold in rice cereal until coated; press into prepared pan. Freeze for 10 minutes.
  • Melt chocolate chips and coconut oil; drizzle over the set treats. Freeze for 5 minutes before cutting into 8 bars.
  • Cut into bars and serve immediately. Store leftovers in fridge for up to 5 days.

Notes

For a firmer texture, keep treats refrigerated. Adjust sweetness by choosing your preferred sweetener.
