A classic and creamy potato salad perfect for picnics and gatherings. Easy to prepare with simple ingredients for a delicious side dish.

Ingredients

Potatoes and Vegetables

  • 3 pounds medium potatoes
  • 1 chopped onion
  • 1 chopped celery stalk
  • 4 Eggs hard-boiled eggs
  • 2 tablespoons white distilled vinegar
  • 1 cup Mayonnaise
  • 1 tablespoon Yellow mustard
  • 2 tablespoons pickle relish
  • to taste salt and pepper
  • 2 spring onions sliced
  • 1 teaspoon paprika

Instructions 

  • Boil potatoes until firm-tender, then drain and cool.
  • Chop cooled potatoes, onions, and celery; add to a large bowl.
  • Hard-boil, peel, and chop eggs; add to the mixture.
  • Mix in vinegar, mayonnaise, mustard, relish, salt, pepper, and sliced spring onions.
  • Garnish with paprika and serve chilled.

Notes

For extra flavor, chill the salad for at least an hour before serving.
