A flavorful and versatile chicken salad infused with basil pesto, perfect for a quick lunch or light dinner.
Ingredients

cooked chicken breast, shredded or chopped

basil pesto

plain Greek yogurt or mayonnaise

chopped celery

Instructions
If not using cooked chicken, cook 2 chicken breasts and cool before shredding.
Mix pesto, Greek yogurt, lemon juice, salt, and pepper in a bowl until smooth.
Add chicken, celery, red onion, and cherry tomatoes; toss gently to coat.
Refrigerate for at least 30 minutes to meld flavors.
Serve over greens, in wraps, or with crackers as desired.
Notes
You can add toasted pine nuts or Parmesan for extra flavor.
