A flavorful and versatile chicken salad infused with basil pesto, perfect for a quick lunch or light dinner.

Ingredients

Protein

  • 2 cups cooked chicken breast, shredded or chopped
  • 1/3 cup basil pesto
  • 1/4 cup plain Greek yogurt or mayonnaise
  • 1/4 cup chopped celery
  • 1/4 cup diced red onion (optional)
  • 1/4 cup cherry tomatoes, halved
  • to taste Salt and pepper
  • Juice of half a lemon lemon juice
  • Optional add-ins: toasted pine nuts, grated Parmesan, avocado chunks

Instructions 

  • If not using cooked chicken, cook 2 chicken breasts and cool before shredding.
  • Mix pesto, Greek yogurt, lemon juice, salt, and pepper in a bowl until smooth.
  • Add chicken, celery, red onion, and cherry tomatoes; toss gently to coat.
  • Refrigerate for at least 30 minutes to meld flavors.
  • Serve over greens, in wraps, or with crackers as desired.

Notes

You can add toasted pine nuts or Parmesan for extra flavor.
