Enjoy these flavorful flatbreads topped with tender pesto-coated chicken and fresh cherry tomatoes for a quick and delicious meal.

Ingredients

Protein

  • 3 pieces boneless, skinless chicken breasts (about 1 lb)
  • 1/2 cup fresh basil pesto
  • 4 flatbreads flatbreads (store-bought or homemade)
  • 1 cup shredded mozzarella cheese
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil
  • to taste Salt and pepper

Instructions 

  • Preheat oven to 400°F (200°C).
  • Season chicken with salt and pepper, then sear in olive oil for 6-7 minutes per side until cooked. Rest, then slice thinly and coat with pesto.
  • Arrange flatbreads on a baking sheet, top with pesto chicken, and sprinkle with mozzarella.
  • Bake for 10-12 minutes until cheese is bubbly and browned.
  • Add cherry tomatoes on top, cool slightly, then slice into wedges.

Notes

For extra flavor, sprinkle fresh basil or red pepper flakes before serving.
