A fresh and flavorful salad combining sweet pears, peppery arugula, and crunchy candied walnuts, perfect for a light lunch or appetizer.

Ingredients

Walnuts and Candied Toppings

  • 50 g walnuts (chopped)
  • 2 tbsp maple syrup

Salad Greens and Fruits

  • 2 pears pears (ripe and sliced)
  • 2 cup arugula
  • 2 tbsp dried cranberries
  • 2 tbsp pepitas

Dressing

  • 2 tbsp olive oil (extra virgin)
  • 0.25 cup parmesan cheese (shaved)
  • 0.5 lemon lemon (juiced)
  • 1 tbsp honey
  • 1 tsp mayonnaise
  • 1 tsp seeded mustard

Additional

  • ½ cup olive oil (for dressing)
  • ½ lemon lemon (juiced) (for dressing)

Instructions 

  • Preheat oven to 350°F (175°C). Toss walnuts with maple syrup and bake until caramelized, about 10 minutes.
  • In a small bowl, whisk together olive oil, lemon juice, honey, mayonnaise, and mustard to make the dressing.
  • In a large bowl, combine arugula, pears, cranberries, pepitas, and shaved parmesan.
  • Drizzle the dressing over the salad and toss gently to combine.
  • Top the salad with candied walnuts and serve immediately.

Notes

For extra crunch, add toasted bread crumbles or seeds.
