Instructions
Preheat oven to 350°F (175°C). Toss walnuts with maple syrup and bake until caramelized, about 10 minutes.
In a small bowl, whisk together olive oil, lemon juice, honey, mayonnaise, and mustard to make the dressing.
In a large bowl, combine arugula, pears, cranberries, pepitas, and shaved parmesan.
Drizzle the dressing over the salad and toss gently to combine.
Top the salad with candied walnuts and serve immediately.
