Instructions
Preheat oven to 325°F (160°C). Line cupcake tins with liners or spray a mini cheesecake pan.
Process Oreos into fine crumbs, add melted butter, and press into tins. Bake 5 minutes, then cool.
Beat cream cheese, then mix in sugar, peanut butter, sour cream, flour, vanilla, and salt. Add eggs one at a time, then fill crusts.
Bake for 16-18 minutes until slightly jiggly, then cool and refrigerate for at least 4 hours.
Make ganache by melting chocolate, butter, and corn syrup; stir in vanilla. Top chilled cheesecakes with ganache, garnish with halved peanut butter cups, sprinkle sea salt, then chill until set.
