A refreshing and colorful peach fruit salad perfect for summer gatherings or a healthy snack.

Ingredients

Dressing

  • 2 tablespoons honey
  • 1 to 2 clementines clementines (including zest and juice)
  • 1 large lemon (including zest and juice)
  • 1/4 teaspoon vanilla extract (optional)

Fruits

  • 16 ounces fresh strawberries (hulled and thinly sliced)
  • 6 ounces fresh blueberries
  • 6 ounces fresh blackberries
  • 2 ripe peaches peaches (pit removed and thinly sliced)
  • 8-10 leaves fresh mint leaves (or basil, optional)

Instructions 

  • Add dressing ingredients to a jar, shake well.
  • Wash and slice all fruit; peel peaches if desired.
  • (Optional) Chill the fruit before serving.
  • Combine fruit in a large bowl, drizzle with dressing, and toss gently.
  • Slice or tear mint leaves and sprinkle on top, then serve immediately.

Notes

For extra flavor, chill the dressed fruit before serving.
