A delicious and healthy breakfast featuring warm roasted peaches, crunchy granola, and creamy yogurt.

Ingredients

Oats and Nuts

  • 1.5 cups oats
  • 1 tsp cinnamon
  • 0.25 tsp nutmeg
  • pinch salt
  • 0.5 cup shredded coconut (Sweetened or unsweetened)
  • 0.33 cup chopped pecans
  • 2 tbsp olive oil
  • 0.33 cup maple syrup
  • 0.5 tsp vanilla
  • 2 tbsp almond butter

Fruits

  • 3 medium peaches (ripe and juicy)
  • 3 tbsp sugar

Dairy

  • vanilla yogurt vanilla yogurt (for serving)

Instructions 

  • Preheat oven to 325°F (160°C). Make granola as directed.
  • Slice peaches, toss with sugar, and let sit for 10 minutes. Roast at 400°F (200°C) for 12-14 minutes.
  • Assemble bowls with yogurt, warm peaches, and granola. Serve immediately.
  • Store leftover granola in an airtight container at room temperature for up to two weeks.
