A fresh and flavorful salad featuring roasted cherry tomatoes, creamy burrata, and vibrant greens, perfect for a quick and elegant meal.

Ingredients

Vegetables

  • 2 pints cherry or grape tomatoes (halved)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • 1 ball burrata cheese (about 8 oz)
  • 4 cups mixed greens (arugula, spinach, or baby kale)
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon extra virgin olive oil
  • to garnish Fresh basil leaves (roughly torn)
  • 1 tablespoon toasted pine nuts or sunflower seeds (optional)
  • a pinch sea salt (for finishing, optional)

Instructions 

  • Preheat oven to 400°F (200°C). Halve tomatoes, toss with olive oil, oregano, garlic powder, salt, and pepper. Roast for 25-30 minutes.
  • Let tomatoes cool slightly. Tear burrata into smaller pieces. Toss greens with balsamic and olive oil, season with sea salt.
  • Arrange greens on a platter, scatter roasted tomatoes, top with burrata, garnish with basil and nuts, drizzle with extra olive oil, and serve.

Notes

For extra flavor, add fresh herbs or a drizzle of honey.
