A fresh and flavorful salad featuring roasted cherry tomatoes, creamy burrata, and vibrant greens, perfect for a quick and elegant meal.
Ingredients

cherry or grape tomatoes
(halved)

olive oil

dried oregano

teaspoon
garlic powder
to taste
Salt and pepper

ball
burrata cheese
(about 8 oz)

mixed greens
(arugula, spinach, or baby kale)

balsamic vinegar

tablespoon
extra virgin olive oil
to garnish
Fresh basil leaves
(roughly torn)

toasted pine nuts or sunflower seeds

sea salt
(for finishing, optional)
Instructions
Preheat oven to 400°F (200°C). Halve tomatoes, toss with olive oil, oregano, garlic powder, salt, and pepper. Roast for 25-30 minutes.
Let tomatoes cool slightly. Tear burrata into smaller pieces. Toss greens with balsamic and olive oil, season with sea salt.
Arrange greens on a platter, scatter roasted tomatoes, top with burrata, garnish with basil and nuts, drizzle with extra olive oil, and serve.
Notes
For extra flavor, add fresh herbs or a drizzle of honey.
