A flavorful and easy-to-make baked chicken and rice dish perfect for a comforting meal.

Ingredients

Marinade

  • 3 tablespoons olive oil
  • 6 cloves garlic (minced)
  • 1 tablespoon paprika
  • 3 teaspoons oregano
  • 2 teaspoons thyme
  • 1.5 teaspoons salt
  • 1.5 teaspoons black pepper
  • ¼ teaspoon turmeric powder
  • 8 pieces boneless skinless chicken thighs (3-3 ½ pounds)

Garnish

  • Chopped parsley parsley (for serving)

Rice

  • 1 ½ cups basmati rice (rinsed)
  • 1 tablespoon olive oil
  • 1 small onion (finely diced)
  • ¾ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups hot water

Instructions 

  • Preheat oven to 375°F (190°C).
  • Mix olive oil, garlic, paprika, oregano, thyme, salt, pepper, and turmeric. Marinate chicken for 20 minutes.
  • Combine rice, onion, oil, salt, pepper, and hot water in a baking dish. Arrange chicken on top.
  • Cover with foil and bake for 45 minutes, then uncover and bake for 15 minutes until browned.
  • Remove from oven, fluff rice, and serve garnished with parsley.

Notes

Ensure chicken is cooked through before serving.
