Instructions
Heat oil and sauté onion and bell pepper for 3-4 minutes. Add garlic and cook 30 seconds.
Add ground beef, cook 5-6 minutes until browned. Drain excess fat.
Stir in spices, tomato paste, then add honey and rice, coating everything well.
Pour in broth, tomatoes, and Worcestershire. Bring to boil, then simmer covered for 18-20 minutes.
Add corn and beans in last 5 minutes. Fluff rice, top with cheese, cilantro, and lime wedges. Serve hot.
Notes
For extra heat, add sliced jalapeños on top before serving.
