One-Skillet Smoky Honey Chili Beef Rice

A flavorful and hearty one-skillet dish combining smoky spices, sweet honey, and tender beef with rice and vegetables for a satisfying meal.

Ingredients

Oil and Aromatics

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced

Vegetables

  • 1 red bell pepper, diced
  • 1 small onion, finely chopped

Spices and Sauces

  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder (adjust to taste)
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon black pepper
  • 1 tablespoon tomato paste
  • 2 tablespoons honey

Main Ingredients

  • 1 cup long-grain white rice
  • 2 cups beef broth
  • 1 can diced tomatoes, with juices
  • 1 teaspoon Worcestershire sauce
  • 1 cup frozen corn
  • 1 cup black beans, drained and rinsed (optional)
  • ½ cup shredded cheddar cheese
  • ¼ cup fresh cilantro, chopped
  • 1 lime cut into wedges
  • Sliced jalapeños for extra heat jalapeños

Instructions 

  • Heat oil and sauté onion and bell pepper for 3-4 minutes. Add garlic and cook 30 seconds.
  • Add ground beef, cook 5-6 minutes until browned. Drain excess fat.
  • Stir in spices, tomato paste, then add honey and rice, coating everything well.
  • Pour in broth, tomatoes, and Worcestershire. Bring to boil, then simmer covered for 18-20 minutes.
  • Add corn and beans in last 5 minutes. Fluff rice, top with cheese, cilantro, and lime wedges. Serve hot.

Notes

For extra heat, add sliced jalapeños on top before serving.
