Ingredients

Meat

  • 10 ounces smoked sausage (Andouille or kielbasa)

Pasta

  • 4 ounces pasta (penne or rigatoni)

Seasonings and Oils

  • 1 tablespoon Cajun seasoning
  • 1 tablespoon olive oil

Vegetables

  • 1 cup diced bell peppers (mixed colors)
  • 1/2 cup diced onion

Liquids

  • 2 cups low-sodium chicken broth ((add more if needed))
  • 1 cup heavy cream
  • 1 cup shredded Parmesan cheese

Spices

  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper (optional, for extra spice)

Optional Greens

  • 1 cup fresh spinach (optional)

Garnish

Instructions 

  • Sauté sliced sausage in olive oil until browned, then add diced onions and bell peppers; cook until softened.
  • Add Cajun seasoning, garlic powder, and cayenne pepper; stir to combine.
  • Pour in chicken broth and bring to a boil, then add pasta and cook until al dente, stirring occasionally.
  • Reduce heat and stir in heavy cream and Parmesan cheese; cook until sauce thickens.
  • Add spinach (if using) and cook until wilted; garnish with chopped parsley before serving.

Notes

For extra spice, add more cayenne pepper or hot sauce.
