A quick and flavorful one-pot meal combining beef, pasta, and taco seasonings for a satisfying dinner.

Ingredients

Meat

  • 1 pound ground beef ((450g))

Seasonings

  • 2 tablespoons taco seasoning

Pasta

  • 8 ounces pasta ((225g, such as penne, rotini, or shells))

Canned Tomatoes

  • 14.5 ounces diced tomatoes

Tomato Sauce

  • 1 cup tomato sauce

Broth or Water

  • 2 cups beef broth or water

Shredded Cheese

  • 1 cup shredded cheese ((cheddar, Monterey Jack, or Mexican blend))

Olive Oil (optional)

  • 1 tablespoon olive oil

Garlic (optional)

  • 2 cloves garlic (minced)

Black Beans (optional)

  • 0.5 cup black beans

Corn Kernels (optional)

  • 0.5 cup corn kernels

JalapeƱos or Diced Bell Peppers (optional)

  • 0.25 cup jalapeƱos or diced bell peppers

Instructions 

  • In a large pot, cook ground beef until browned, then drain excess fat.
  • Add garlic and optional olive oil; cook for 1 minute.
  • Stir in taco seasoning, diced tomatoes, tomato sauce, and broth; bring to a boil.
  • Add pasta and optional vegetables; reduce heat and simmer until pasta is tender, about 15 minutes.
  • Stir in shredded cheese and optional beans or corn; cook until cheese melts.
