A quick and hearty one-pan meal combining ground beef, rice, and vegetables for a satisfying dinner.

Ingredients

Meat

  • 1 pound ground beef

Grains

  • 1 cup long-grain white rice

Vegetables

  • 1 medium onion
  • 1 bell pepper bell pepper

Aromatics

  • 2 cloves garlic (minced)

Broth & Liquids

  • 2 ½ cups beef broth

Spices & Seasonings

  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • Salt and black pepper Salt and black pepper (to taste)

Oils

  • 2 tablespoons olive oil

Instructions 

  • Heat olive oil in a skillet, sauté onions and peppers until softened (~4 min).
  • Add ground beef, cook until browned (~6-8 min), then drain excess fat.
  • Stir in rice, spices, salt, and pepper; toast for 2 min.
  • Pour in broth, bring to boil, then simmer covered for 18-20 min until rice is tender.
  • Rest for 5 min, then fluff and serve.

Notes

Feel free to garnish with fresh herbs or cheese for extra flavor.
