One Pan Triple Tomato Basil Pasta

A flavorful and easy one-pan pasta dish featuring three types of tomatoes and fresh basil, perfect for a quick weeknight dinner.

Ingredients

olive oil

  • 1/4 cup olive oil

sun dried tomatoes (packed in olive oil)

  • 1/4 cup sun dried tomatoes (packed in olive oil)

cherry tomatoes

  • 1 pint cherry tomatoes

garlic, minced

  • 8 cloves garlic, minced

crushed red pepper

  • 1/2 teaspoon crushed red pepper

black pepper

  • 1/2 teaspoon black pepper

salt

  • 2 teaspoons salt (don't skimp here!)

bucatini pasta or thick spaghetti

  • 1 pound bucatini pasta or thick spaghetti

vegetable broth

  • 4 cups vegetable broth

water

  • 2 1/2 cups water

tomato paste (6 oz can)

  • 6 oz tomato paste

fresh basil, thinly sliced

  • 2 1/2 cups fresh basil, thinly sliced (about 3 large handfuls)

Instructions 

  • Add olive oil, sun dried tomatoes, and cherry tomatoes; cook for 6 minutes until tomatoes burst.
  • Add garlic, red pepper, black pepper, and salt; cook for 2 minutes.
  • Add pasta, broth, water, and tomato paste; bring to a boil and cook for 14 minutes until pasta is tender.
  • Remove from heat, stir in basil, cover, and let sit for 5 minutes.
  • Serve with extra basil and cheese if desired.

Notes

Use fresh basil for the best flavor and adjust seasoning to taste.
