One Pan Tortellini with Sausage

A quick and creamy one-pan meal combining flavorful sausage, cheese tortellini, and fresh spinach for a satisfying dinner.

Ingredients

Meat

  • 11 ounces Italian sausages (see note)
  • 3 cloves garlic (minced)
  • 0.25 cup chicken broth
  • 14 ounces diced tomatoes (with juices)
  • 0.5 cup heavy/whipping cream
  • 9 ounces refrigerated cheese tortellini
  • 2 cups fresh baby spinach (loosely packed)
  • to taste Salt & pepper
  • to taste Freshly grated parmesan cheese (optional)

Instructions 

  • Remove sausage meat from casings and crumble into a skillet. Cook until browned, then drain excess fat.
  • Add garlic, chicken broth, diced tomatoes, cream, and tortellini. Cook uncovered for 5-7 minutes until tortellini is tender and sauce thickens.
  • Stir in spinach and cook until wilted. Season with salt and pepper, then serve topped with parmesan if desired.

Notes

Cooking the tortellini in the sauce helps thicken it and enhances flavor.
