A quick and hearty one-pan casserole combining tender chicken, rice, and cheese for a comforting meal.

Ingredients

Chicken

  • 2 cups cooked chicken, shredded or cubed

Cream Soup

  • 1 can condensed cream of chicken soup (10.5 oz can)

Rice

  • 1 cup uncooked instant white rice

Broth & Dairy

  • 1 cup chicken broth
  • 1 cup milk

Cheese

  • 1 cup shredded cheddar cheese, divided

Other Ingredients

  • 0.5 cup sour cream
  • 1 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 cup frozen broccoli florets (optional)

Instructions 

  • Preheat oven to 375°F (190°C). Grease a 9×13 inch dish.
  • Mix soup, broth, milk, sour cream, and seasonings until smooth.
  • Stir in chicken, rice, half of cheese, and broccoli if using. Pour into dish.
  • Cover with foil and bake 25 minutes. Remove foil, add remaining cheese, bake 5-10 minutes.
  • Let stand 5 minutes before serving.

Notes

For extra flavor, add herbs or spices as desired.
