A comforting classic, this chicken pot pie combines tender chicken and vegetables in a flaky crust for a hearty meal.

Ingredients

Chicken

  • 1 lb boneless, skinless chicken breast, cubed

Vegetables

  • 1 cup sliced carrots
  • 1 cup frozen green peas
  • 1/2 cup sliced celery

Dairy and thickening

  • 1/3 cup unsalted butter
  • 1/3 cup chopped onion
  • 1/3 cup all-purpose flour
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp celery seed
  • 3/4 cup chicken broth
  • 2/3 cup milk
  • 2 unbaked pie crusts (9 inch each) pie crusts

Instructions 

  • Preheat oven to 425°F (220°C).
  • Cook chicken and vegetables in a skillet until tender.
  • In a saucepan, melt butter, stir in flour, salt, pepper, and celery seed to make a roux. Gradually add chicken broth and milk, cook until thickened.
  • Combine chicken mixture with sauce and pour into one pie crust.
  • Cover with second crust, seal edges, and cut slits on top. Bake for 40 minutes until golden brown.

Notes

Use a pie shield or foil to prevent over-browning.
