Ingredients

Chicken

  • 1 lb boneless, skinless chicken breast, cubed

Vegetables

  • 1 cup sliced carrots
  • 1 cup frozen green peas
  • 1/2 cup sliced celery

Dairy and thickening

  • 1/3 cup unsalted butter
  • 1/3 cup chopped onion
  • 1/3 cup all-purpose flour
  • 3/4 cup chicken broth
  • 2/3 cup milk

Pie Crusts

  • 2 unbaked pie crusts (9 inch each) pie crusts
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp celery seed

Instructions 

  • Preheat oven to 425°F (220°C).
  • Cook chicken and vegetables in a skillet until tender.
  • In a saucepan, melt butter, stir in flour, then gradually add chicken broth and milk, cooking until thickened.
  • Combine chicken mixture with sauce, season with salt, pepper, and celery seed.
  • Pour filling into pie crusts, cover with top crust, and cut slits for steam.
  • Bake for 40 minutes or until golden brown.

Notes

For a richer flavor, use homemade chicken broth and add herbs like thyme or parsley.
