A warm, hearty breakfast bake combining fresh apples, oats, and pecans, topped with a sweet glaze for a delicious start to your day.

4cupsGranny Smith apples (peeled and cut into ¼" cubes)(about 6–8 apples)

1/2cupold-fashioned oats
Flour
1cupall-purpose flour
Baking soda
2tspbaking soda
Ground cinnamon

Butter
1/2cupunsalted butter
Sugar
1/2cupgranulated sugar
Vanilla extract
1/2tsppure vanilla extract
Salt
1/2tspsalt
Eggs
2largeeggs
Apple juice
1/4cupapple juice (or water)
Pecans
3/4cupfinely chopped pecans (divided)
Powdered Sugar
3/4cuppowdered sugar
Milk
1Tbspmilk
Instructions
Preheat oven to 375°F (190°C). Coat a 9" x 13" dish with spray. Toss apples with lemon juice and set aside.
Pulse oats until coarse meal. Mix flour, baking soda, and cinnamon; set aside.
Cream butter and sugar until fluffy. Add vanilla, salt, then eggs one at a time. Mix in dry ingredients and apple juice. Fold in apples and ½ cup pecans.
Transfer batter to dish, top with remaining pecans, and bake for 25–30 minutes. Cool, then drizzle with glaze made from powdered sugar and milk.
Notes
For best results, use fresh apples and finely chop pecans for even distribution.
