A delicious low-carb dish featuring bell peppers stuffed with seasoned ground beef, polenta, and cheese, baked to perfection.
Ingredients

(tops removed and seeds discarded)

Instructions
Preheat oven to 350°F (175°C). Prepare peppers and set aside.
Cook beef with olive oil until browned; add onion, garlic, tomato sauce, Italian seasoning, and polenta. Stir well.
Stuff peppers with beef mixture, cover with foil, and bake for 25 minutes.
Remove foil, sprinkle cheese on top, and bake for an additional 10 minutes until cheese bubbles.
Serve hot, watching for steam.
