A delicious low-carb dish featuring bell peppers stuffed with seasoned ground beef, polenta, and cheese, baked to perfection.

Ingredients

Meat and Vegetables

  • 1 lb lean ground beef
  • 1 T olive oil
  • 1 c water
  • 6 bell peppers bell peppers (tops removed and seeds discarded)
  • 1 8 oz can tomato sauce
  • ½ c diced onion
  • 1 t minced garlic
  • 1 t Italian seasoning
  • 1 ½ c mozzarella cheese
  • 6 oz polenta (cut into small mushy pieces)

Instructions 

  • Preheat oven to 350°F (175°C). Prepare peppers and set aside.
  • Cook beef with olive oil until browned; add onion, garlic, tomato sauce, Italian seasoning, and polenta. Stir well.
  • Stuff peppers with beef mixture, cover with foil, and bake for 25 minutes.
  • Remove foil, sprinkle cheese on top, and bake for an additional 10 minutes until cheese bubbles.
  • Serve hot, watching for steam.
