small “gumbo crabs” or blue crabs (or crab meat)

large raw shrimp (cleaned)

dried long grain rice
Instructions
Make a dark roux by whisking flour, oil, and butter over medium-high heat for 30-40 minutes until milk chocolate color.
Prep vegetables, sausages, and herbs. De-slime okra by boiling with vinegar for 3-4 minutes, then drain.
Add sausages to the roux and cook 1-2 minutes, then stir in vegetables and habanero, sauté for 8-10 minutes.
Add broth, seasonings, crawfish, and crabs. Simmer on low for 1 hour. Cook rice separately according to package.
Add shrimp, oysters, and okra; simmer 5 minutes. Rest for 30 minutes, then reheat and serve with rice and garnish.
Notes
Use fresh seafood for best flavor. Adjust seasoning to taste.
