A creamy and savory mushroom stroganoff perfect for a comforting vegetarian meal.

Ingredients

  • 1 tbsp olive oil
  • 1 piece onion, chopped
  • 3 cloves garlic, minced
  • 500 g mushrooms, sliced
  • 1 tbsp flour
  • 1 cup vegetable broth
  • 1 cup coconut milk
  • 1 tbsp soy sauce
  • to taste Salt and pepper
  • for garnish Fresh parsley, chopped

Instructions 

  • Heat olive oil in a pan over medium heat. Add onion and garlic; cook until soft.
  • Add mushrooms and cook until they release moisture.
  • Stir in flour and cook for 1 minute.
  • Add vegetable broth, coconut milk, and soy sauce. Simmer until thickened.
  • Season with salt and pepper. Garnish with parsley. Serve hot.

Notes

For a richer flavor, sauté mushrooms until golden before adding liquids.
