A delightful layered dessert combining spiced mulled apples, soaked sponge fingers, and creamy custard, topped with whipped cream and festive garnishes.

Ingredients

Cake and sponge layers

  • 175 g trifle sponge fingers
  • 400 g ready-made madeira sponge cake, cut into fingers

Mulled cider

  • 1 litre dry cider
  • 4 tbsp soft brown sugar
  • 0.5 unwaxed lemon zest and juice
  • 1 orange zest and juice

Spices and flavorings

  • 1 vanilla pod split lengthways

Custard

  • 350 ml double cream
  • 350 ml whole milk
  • 4 medium free-range egg yolks
  • 2 tbsp cornflour
  • 75 g caster sugar

Syllabub topping

  • 100 ml mulled cider (reserved from earlier)
  • 60 g caster sugar

Decoration

  • Dried apple slices dried apple slices
  • Zest ½ unwaxed lemon lemon zest
  • Sprinkling ground cinnamon ground cinnamon

Instructions 

  • Simmer apple wedges with spices until tender, then cool.
  • Layer sponge fingers and cake in a dish. Strain cider, soak gelatine, and pour over layers. Chill until set.
  • Make custard by heating cream, milk, and vanilla, then whisking with egg yolks, sugar, and cornflour. Cool.
  • Add mulled apples and custard to the layered sponge. Chill with cling film on surface.
  • Whisk reserved cider, sugar, and cream to make syllabub. Top the trifle and decorate with dried apple slices, lemon zest, and cinnamon.

Notes

Ensure the custard is cooled before layering to prevent melting the sponge layers.
