Instructions
Marinate chicken with lemon juice, spices, and garlic for at least 1 hour.
Preheat oven to 350°F (175°C). Brown chicken in a skillet, then simmer with chicken stock for 10 minutes.
Sauté onion and garlic, add spices, then stir in rice and stock. Arrange chicken on top and bake for 20 minutes.
Rest, fluff rice, and serve with lime wedges, Greek yogurt, and fresh coriander.
