A flavorful Moroccan-inspired dish featuring tender chicken thighs cooked with aromatic spices and served over fragrant rice, perfect for a hearty and satisfying meal.

Ingredients

Meat

  • 6 pieces chicken thighs, bone-in (skin optional)
  • 0.5 lemon juice of ½ lemon
  • 0.25 cup chicken stock
  • 1 tablespoon olive oil
  • 1.5 tablespoons ground turmeric
  • 1 tablespoon ground cumin
  • 0.5 tablespoon ground coriander
  • 1.5 tablespoons dried oregano
  • 6 cloves garlic, crushed
  • to taste Salt and pepper

Rice

  • 2 cups Basmati rice
  • 3.5 cups chicken stock

Vegetables

  • 1 piece onion, finely chopped
  • 4 cloves garlic, crushed
  • 1 tablespoon ground turmeric
  • 1 teaspoon ground coriander
  • 2 tablespoons olive oil

Additional

  • to taste Salt, to taste
  • as needed Lime wedges
  • as needed Greek yogurt
  • a handful Fresh coriander leaves

Instructions 

  • Marinate chicken with lemon juice, spices, and garlic for at least 1 hour.
  • Preheat oven to 350°F (175°C). Brown chicken in a skillet, then simmer with chicken stock for 10 minutes.
  • Sauté onion and garlic, add spices, then stir in rice and stock. Arrange chicken on top and bake for 20 minutes.
  • Rest, fluff rice, and serve with lime wedges, Greek yogurt, and fresh coriander.

Notes

For deeper flavor, marinate overnight. Adjust salt and spices to taste.
