A flavorful and hearty Mexican-inspired casserole combining rice, beef, beans, and cheese for a satisfying meal.

Instructions
Cook ground beef until no longer pink; drain excess grease.
Add onion, bell pepper, and garlic; cook 3-4 minutes. Stir in taco seasoning.
Add rice, beans, corn, tomatoes, salsa, and broth; bring to boil. Cover and simmer 20-25 minutes.
Sprinkle cheese on top; cover and let stand 5 minutes to melt.
Serve hot with desired toppings. Enjoy!

For a vegetarian version, substitute beef with plant-based protein or additional vegetables.
