A flavorful and hearty Mexican-inspired casserole combining rice, beef, beans, and cheese for a satisfying meal.

Ingredients

Meat

  • 1 lb lean ground beef
  • 1 unit onion, diced
  • 1 red bell pepper red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 packet taco seasoning mix

Grains

  • 1 cup uncooked long-grain white rice

Canned Goods

  • 1 can black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1 can diced tomatoes with green chiles, undrained
  • 1 cup salsa
  • 1.5 cups low-sodium chicken broth
  • 1.5 cups shredded Mexican blend cheese

Optional toppings

  • chopped cilantro, sliced green onions, sour cream, sliced avocado (for garnish)

Instructions 

  • Cook ground beef until no longer pink; drain excess grease.
  • Add onion, bell pepper, and garlic; cook 3-4 minutes. Stir in taco seasoning.
  • Add rice, beans, corn, tomatoes, salsa, and broth; bring to boil. Cover and simmer 20-25 minutes.
  • Sprinkle cheese on top; cover and let stand 5 minutes to melt.
  • Serve hot with desired toppings. Enjoy!

Notes

For a vegetarian version, substitute beef with plant-based protein or additional vegetables.
