A flavorful and easy-to-make Mexican-inspired chicken and rice dish perfect for weeknight dinners.

Ingredients

Oil

  • 2 tablespoons olive oil
  • 1 small onion (minced)
  • 1.5 pounds boneless skinless chicken breast (cut into ½-inch cubes)
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup uncooked long grain rice (rinsed)
  • 3 tablespoons tomato paste
  • 1.5 cups water
  • 1 can (4 ounces) green chilies

Cilantro

Instructions 

  • Heat olive oil in a large pot over medium heat. Cook onions until soft, about 5 minutes.
  • Add chicken and season with spices; cook until mostly done, about 7 minutes.
  • Stir in rice and tomato paste; cook for 2 minutes.
  • Add water and chilies; bring to boil, then simmer covered for 20 minutes. Let steam for 10 minutes off heat.
  • Fluff rice, garnish with cilantro, and serve warm.

Notes

For extra flavor, add a squeeze of lime before serving.
