Instructions
Heat olive oil in a large pot over medium heat. Cook onions until soft, about 5 minutes.
Add chicken and season with spices; cook until mostly done, about 7 minutes.
Stir in rice and tomato paste; cook for 2 minutes.
Add water and chilies; bring to boil, then simmer covered for 20 minutes. Let steam for 10 minutes off heat.
Fluff rice, garnish with cilantro, and serve warm.
Notes
For extra flavor, add a squeeze of lime before serving.
