Ingredients

Grains

  • 1 cup cooked white or brown rice

Legumes

  • 1 cup black beans, drained and rinsed

Vegetables & Oils

  • 1 tablespoon olive oil
  • 1 unit onion, finely chopped
  • 2 cloves garlic, minced
  • 1 diced bell pepper (any color), diced

Spices & Seasonings

  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder

Fresh Produce

  • 1 cup diced tomatoes (canned or fresh)
  • 1 unit avocado, sliced
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1/4 cup fresh cilantro, chopped
  • 1 unit lime, juiced

Optional Toppings

  • to taste sour cream, salsa, jalapeños (as desired)

Instructions 

  • Warm olive oil in a skillet over medium heat. Sauté onion and garlic until translucent (~3 min).
  • Add diced bell pepper and cook until tender (~2-3 min).
  • Mix in black beans, cumin, chili powder, and tomatoes. Simmer for 5-6 min, then season with salt and pepper.
  • Layer cooked rice, beans, vegetables, avocado, cheese, and cilantro in bowls. Squeeze lime juice over each.
  • Add optional toppings like sour cream, salsa, or jalapeños. Serve warm.
