Ingredients

Meat and Seasonings

  • 1 pound lean ground beef (or chicken or turkey)
  • 1 teaspoon cumin
  • 2 teaspoons chili powder
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • to taste Salt and Pepper
  • 1 tablespoon olive oil
  • 1 small onion (diced, optional)
  • 1 can (4oz) green chilis (optional)
  • 15 oz can black beans (drained and rinsed)
  • water water (if mixture is too dry)

Vegetables and Toppings

  • enough for 4 salads portion lettuce (butter, romaine, iceberg, etc)

  • black olives black olives
  • green onion green onion
  • red onion red onion
  • jalapeno peppers jalapeno peppers (raw or pickled)

Optional Beans as Topping

  • black beans black beans (skip adding to meat if used as topping)

Instructions 

  • Heat olive oil in a skillet, cook beef until no longer pink, about 5-7 minutes.
  • Season with salt, pepper, cumin, chili powder, onion, and garlic powders. Add diced onion and cook until tender.
  • Add green chilis and black beans, warm through, adding water if dry.
  • Assemble salads with lettuce, top with beef mixture, and add desired toppings. Serve immediately.

Notes

Feel free to customize toppings and adjust seasoning to taste.
