Ingredients

Salad Ingredients

  • 2 cans white beans (cannellini or great northern), drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 small cucumber, diced
  • ½ medium red onion, thinly sliced
  • ¼ cup kalamata olives, pitted and halved
  • ¼ cup crumbled feta cheese
  • 2 tablespoons chopped fresh parsley
  • 1 medium lemon, juiced
  • 3 tablespoons extra virgin olive oil
  • to taste salt and freshly ground black pepper
  • ½ cup marinated artichoke hearts, chopped, or roasted red peppers, diced (optional)

Instructions 

  • Drain and rinse the white beans thoroughly.
  • Chop cherry tomatoes, cucumber, red onion, olives, and parsley.
  • In a large bowl, combine white beans, tomatoes, cucumber, onion, olives, feta, and parsley.
  • In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
  • Pour the dressing over the salad and toss gently to combine.
  • Let sit for 10–15 minutes before serving to allow flavors to blend.

Notes

Serve chilled or at room temperature for best flavor.
