Ingredients

  • 2 cups canned chickpeas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 medium red bell pepper, diced
  • 1 small red onion, finely chopped
  • 1/4 cup pitted kalamata olives, sliced
  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon red wine vinegar
  • 1 clove garlic, minced
  • salt and pepper to taste

Instructions 

  • Combine chickpeas, tomatoes, cucumber, bell pepper, onion, and olives in a bowl.
  • Whisk olive oil, lemon juice, vinegar, and garlic in a small bowl for dressing.
  • Pour dressing over salad and toss gently.
  • Fold in feta, parsley, and mint until evenly mixed.
  • Season with salt and pepper to taste.
  • Refrigerate for 30 minutes before serving.
