Enjoy flavorful shrimp kabobs marinated with fresh herbs and spices, grilled to perfection for a delicious Mediterranean-inspired meal.

Ingredients

Marinade

  • 1/3 cup Extra virgin olive oil
  • Zest of 2 lemons lemon zest
  • 4 cloves garlic (minced)
  • ¼ cup chopped fresh parsley
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • ½ teaspoon coriander
  • ½ teaspoon red pepper flakes
  • 2 lb large shrimp (peeled and deveined)

Additional

  • Kosher salt Kosher salt

Instructions 

  • Mix marinade ingredients and set aside 2 tbsp for later.
  • Pat shrimp dry, season with salt, and coat with marinade. Chill for 20-30 minutes.
  • Thread shrimp onto skewers and grill: 2-3 mins per side on high heat.
  • Remove from grill, brush with reserved marinade, and squeeze lemon juice. Serve immediately.

Notes

Soak bamboo skewers in water for at least 30 minutes before grilling.
