Ingredients

Salad Ingredients

  • 2 cups chickpeas (cooked or canned, drained and rinsed)
  • 1 cup cucumber (chopped)
  • 0.5 cup cherry tomatoes (halved)
  • 0.25 cup red onion (finely chopped)
  • 0.25 cup fresh parsley (chopped)
  • 0.25 cup feta cheese (crumbled, optional) (optional)
  • a handful kalamata olives (sliced)
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 teaspoon dijon mustard
  • 0.5 teaspoon dried oregano
  • salt and pepper (to taste)

Instructions 

  • Combine chickpeas, cucumber, cherry tomatoes, red onion, parsley, feta (if using), and olives in a large bowl.
  • Whisk together olive oil, lemon juice, Dijon mustard, oregano, salt, and pepper in a small bowl.
  • Pour dressing over salad and toss to coat.
  • Let sit for a few minutes to develop flavors before serving.

Notes

For added flavor, let the salad chill in the refrigerator for 30 minutes before serving.
