Instructions
Combine chickpeas, cucumber, cherry tomatoes, red onion, parsley, feta (if using), and olives in a large bowl.
Whisk together olive oil, lemon juice, Dijon mustard, oregano, salt, and pepper in a small bowl.
Pour dressing over salad and toss to coat.
Let sit for a few minutes to develop flavors before serving.
