Instructions
Dice cucumber, halve tomatoes, and slice red onion. Chop parsley and mint.
In a bowl, combine chickpeas, cucumber, tomatoes, red onion, feta, parsley, and mint.
In a small bowl, whisk olive oil, lemon juice, garlic, oregano, salt, and pepper.
Pour dressing over salad and toss gently to coat.
Serve immediately or chill for later.
Notes
For added flavor, let the salad sit for 30 minutes before serving.
