Ingredients

Canned Goods

  • 1 can chickpeas, drained and rinsed ((425g))

Vegetables

  • 1 cucumber diced ((about 200g))
  • 1 pint cherry tomatoes, halved ((about 300g))
  • 1/2 red onion thinly sliced ((about 75g))

Dairy

  • 4 ounces feta cheese, crumbled ((115g))

Herbs

  • 1/4 cup fresh parsley, chopped ((15g))
  • 1/4 cup fresh mint, chopped ((15g))

Condiments

  • 3 tablespoons olive oil ((45ml))
  • 2 tablespoons lemon juice ((30ml))
  • 1 clove garlic, minced
  • 1/2 teaspoon dried oregano

Seasoning

  • salt and pepper to taste

Instructions 

  • Dice cucumber, halve tomatoes, and slice red onion. Chop parsley and mint.
  • In a bowl, combine chickpeas, cucumber, tomatoes, red onion, feta, parsley, and mint.
  • In a small bowl, whisk olive oil, lemon juice, garlic, oregano, salt, and pepper.
  • Pour dressing over salad and toss gently to coat.
  • Serve immediately or chill for later.

Notes

For added flavor, let the salad sit for 30 minutes before serving.
