Enjoy these sweet and savory roasted sweet potatoes glazed with pure maple syrup and cinnamon, perfect as a side dish or snack.
Ingredients
Sweet Potatoes

sweet potatoes
(cut into 1-inch cubes)

olive oil

kosher salt

pure maple syrup

Chopped candied pecans or candied walnuts

Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment or foil and spray with nonstick spray.
Place sweet potatoes on the sheet, drizzle with olive oil, toss, and sprinkle with salt.
Roast for 20 minutes, then remove from oven.
Mix maple syrup and cinnamon in a small bowl.
Drizzle the maple cinnamon mixture over sweet potatoes, toss to coat, and bake for an additional 5-10 minutes. Garnish with candied nuts if desired.
Notes
For extra crunch, add candied pecans or walnuts before serving.
