Instructions
Dice mango, avocado, red bell pepper, and chop spring onion; mix in a bowl. Season with salt, pepper, and lime juice.
Pound chicken fillet, rub with oil, Cajun and garlic seasonings, salt, and paprika.
Cook chicken in a pan with oil for 6-8 minutes until cooked through. Slice and serve with mango salsa and rice.
