A fresh and flavorful dish combining juicy mango salsa with tender chicken, perfect for a quick and healthy meal.

Ingredients

Protein

  • 1 piece chicken fillet

Produce

  • 1 piece mango (diced)
  • 1 piece red bell pepper (diced)
  • 1 piece spring onion (chopped)
  • 1 piece avocado (diced)

Seasonings

  • 0.125 tsp Cajun seasoning
  • 0.125 tsp garlic seasoning
  • to taste salt
  • 0.125 tsp paprika
  • to taste pepper
  • 2 tbsp lime juice

Carbohydrate

  • 3-4 tbsp precooked brown rice

Fats and Oils

  • 2 tbsp sunflower oil (for cooking)

Instructions 

  • Dice mango, avocado, red bell pepper, and chop spring onion; mix in a bowl. Season with salt, pepper, and lime juice.
  • Pound chicken fillet, rub with oil, Cajun and garlic seasonings, salt, and paprika.
  • Cook chicken in a pan with oil for 6-8 minutes until cooked through. Slice and serve with mango salsa and rice.

Notes

Use fresh ingredients for best flavor. Adjust seasoning to taste.
