Instructions
Peel pomegranate, extract seeds, and blend half for juice. Strain the juice.
Mix pomegranate juice with olive oil, vinegar, sugar, and remaining seeds to make dressing.
Combine chopped mango, apple, salt, lemon juice, black pepper, and dressing. Mix well.
Let sit for 5-10 minutes, then garnish with mint leaves and serve.
