A classic and creamy macaroni salad perfect for picnics and gatherings, combining fresh vegetables and herbs with a tangy dressing.

Ingredients

Pasta

  • 1 lb uncooked macaroni pasta
  • 0.5 cup diced red onion
  • 1 medium red bell pepper
  • 3 short ribs short celery ribs
  • 0.25 cup diced green onion
  • 2 tbsp minced fresh parsley
  • 1 tbsp minced fresh dill weed
  • 1 cup mayonnaise
  • 0.5 cup sour cream
  • 1 tbsp Dijon Mustard
  • 2 tbsp apple cider vinegar
  • 1.5 tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • 1 tsp salt ((more or less to taste))

Instructions 

  • Cook pasta in salted water until al dente, then drain and cool.
  • Dice vegetables and herbs; whisk dressing ingredients together.
  • Combine pasta, vegetables, herbs, and dressing; mix well.
  • Cover and refrigerate for at least 2 hours before serving.

Notes

For extra flavor, add a pinch of paprika or chopped fresh herbs before serving.
