A quick and delicious meal combining tender chicken, fresh vegetables, and flavorful rice, perfect for lunch.

Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts ((1.5 lbs))
  • 2 cups long grain rice
  • 1 cup bell peppers, chopped
  • 1 cup broccoli florets
  • 3 cloves garlic, minced
  • 4 tbsp low-sodium soy sauce
  • 2 tbsp honey
  • to taste Salt and pepper
  • 2 tbsp olive oil

Instructions 

  • Cook rice according to package instructions.
  • Season chicken with salt and pepper.
  • Cook chicken in olive oil 5-7 mins per side until done.
  • Add garlic and vegetables; stir-fry 3 mins.
  • Mix soy sauce and honey; pour over chicken and veggies, simmer 2 mins.
  • Assemble bowls with rice, chicken, and vegetables; drizzle with sauce.

Notes

You can customize vegetables or add sesame seeds for extra flavor.
