Instructions
Marinate shrimp with lemon zest, lemon juice, garlic powder, and pepper for 10 minutes.
Preheat grill and spray with olive oil. Grill shrimp 3-4 minutes per side until opaque.
Mix dressing ingredients in a bowl and set aside.
Combine lettuce, half of cheese and croutons, and dressing in a large bowl.
Top salad with cooked shrimp, remaining cheese, and croutons. Toss gently and serve.
Notes
For extra flavor, add a squeeze of fresh lemon before serving.
