A light and flavorful salad combining tender shrimp, crisp romaine, and a tangy low-calorie dressing, perfect for a healthy meal.

Ingredients

Salad

  • 4 cups chopped romaine lettuce
  • 2 tablespoons shredded parmesan cheese
  • 1/2 cup Low Calorie Garlic Parmesan Croutons

Dressing

  • 1/4 cup 0% Greek yogurt
  • 2 tablespoons Dijon mustard
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon lemon juice
  • 1/2 garlic clove minced garlic
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 3 tablespoons water

Shrimp

  • 1/2 lb shrimp (cleaned, deveined, tails removed)
  • 1 each lemon (zest)
  • 2 tablespoons lemon juice
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper

Instructions 

  • Marinate shrimp with lemon zest, lemon juice, garlic powder, and pepper for 10 minutes.
  • Preheat grill and spray with olive oil. Grill shrimp 3-4 minutes per side until opaque.
  • Mix dressing ingredients in a bowl and set aside.
  • Combine lettuce, half of cheese and croutons, and dressing in a large bowl.
  • Top salad with cooked shrimp, remaining cheese, and croutons. Toss gently and serve.

Notes

For extra flavor, add a squeeze of fresh lemon before serving.
