Ingredients

Nuts

  • 3/4 cup pistachios or other nuts
  • 1 pound asparagus (woody ends trimmed)
  • 1/2 cup soft herbs (dill, parsley, tarragon or a combination)
  • 3 tablespoons minced shallots, red onion or scallion
  • 1.5 tablespoons fresh lemon juice (or cider vinegar)
  • Large pinch kosher salt (plus more as needed)
  • 1/4 teaspoon freshly ground black pepper
  • 1/3 cup extra-virgin olive oil (plus more for serving)
  • 3/4 cup coarsely grated cheese (preferably a young sheep’s milk cheese like pecorino or Manchego, plus more for serving)

Instructions 

  • Preheat oven to 350°F (175°C). Toast pistachios on a baking sheet for 5 minutes, then cool and roughly chop.
  • Steam asparagus in 1-inch water until tender, about 5 minutes, then drain.
  • Mix chopped herbs with shallots, lemon juice, salt, and pepper; let sit 2 minutes. Whisk in oil, then add pistachios, cheese, and herbs.
  • Arrange asparagus on a platter, drizzle with oil, season with salt, and top with dressing, herbs, and cheese. Serve with extra cheese and herbs as desired.

Notes

Adjust salt and cheese to taste for best flavor.
