3/4cuppistachios or other nuts
1poundasparagus(woody ends trimmed)
1/2cupsoft herbs(dill, parsley, tarragon or a combination)
3tablespoonsminced shallots, red onion or scallion
1.5tablespoonsfresh lemon juice(or cider vinegar)
Large pinchkosher salt(plus more as needed)
1/4teaspoonfreshly ground black pepper
1/3cupextra-virgin olive oil(plus more for serving)
3/4cupcoarsely grated cheese(preferably a young sheep’s milk cheese like pecorino or Manchego, plus more for serving)
Instructions
Preheat oven to 350°F (175°C). Toast pistachios on a baking sheet for 5 minutes, then cool and roughly chop.
Steam asparagus in 1-inch water until tender, about 5 minutes, then drain.
Mix chopped herbs with shallots, lemon juice, salt, and pepper; let sit 2 minutes. Whisk in oil, then add pistachios, cheese, and herbs.
Arrange asparagus on a platter, drizzle with oil, season with salt, and top with dressing, herbs, and cheese. Serve with extra cheese and herbs as desired.
