Ingredients

Protein

  • 4 pieces boneless skinless chicken breasts (or thighs, if preferred)

Oil

  • 3 tbsp olive oil

Flavorings

  • 2 tbsp lemon juice (freshly squeezed)
  • 1 tbsp lemon zest
  • 2 cloves garlic (minced)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp salt
  • 0.5 tsp black pepper

Rice

  • 1 cup long-grain rice (like basmati or jasmine)

Broth

  • 2 cups chicken broth

Garlic Butter

  • 2 tbsp unsalted butter
  • 3 cloves garlic (minced)

Garnish

  • 1 tsp parsley (freshly chopped, for garnish)

Salt and pepper

Instructions 

  • Marinate chicken with lemon juice, zest, garlic, oregano, thyme, salt, and pepper.
  • Grill chicken until cooked through, about 6-8 minutes per side.
  • Cook rice in chicken broth until tender, about 15 minutes.
  • In a pan, melt butter and sauté minced garlic until fragrant, then stir into cooked rice.
  • Serve grilled chicken over garlic butter rice, garnished with chopped parsley.

Notes

For extra flavor, marinate the chicken for at least 30 minutes.
